Perhaps one of the major differences between North American and European styles of cooking comes in the attitude towards vegetables. It is not unusual to be served a meal in a restaurant, especially in the United States that has meat and potato or rice and no vegetable.
As a child, I was used to having two vegetables with most meals. Perhaps it was because vegetables were cheaper than meat. I know that I feel that vegetables are as important as meat to a meal. I must also admit that I learned to cook vegetables using boiling water. I no longer believe that this is the optimum method and now use either the minimum moisture method, microwave or stir-fry but never water.
By not washing out the vitamins, minerals, colour and flavour of vegetables in water, as a rule, the only addition that I make occasionally is a small dab (max 1 oz) of butter. I rarely use salt in cooking.
You will find several meals in this book that have vegetable as the principal element of the meal. Even children can come to like vegetables as long as you do not try to push them down theirs throats. Our only rule to our children was that they try a little of any new food that we put in front of them regardless of the ingredients.
Vegetables like brussels, cauliflower and broccoli that were hard sells when the kids were younger are now welcome additions to any meal. I have still to find a way to get even my wife to eat beetroot!

We have included salads and salad stuffs in this section here due to space limitations. There is so much information in the actual book that we cannot hope to include it all here. Indeed, you will find that there is a great deal of overlap between sections. Books and websites alike, need for things to fall into neat sections, where in real life they rarely do. You may need to use our site search engine if you are looking for something in particular.

Fruits do not currently have their own section although they are included in the hints and tips. Vegetables seemed like the best place to put them.
