| Eggs are certainly one of the most versatile foods in the kitchen. It is hard to imagine cooking without them. They are an essential ingredient in so many of the foods that we eat on a regular basis. Cakes, desserts, breads, cookies, sauces, dips & dressings are just a few of the items that will often call for eggs. Although many of us grew up believing that eggs were one of nature?s best foods. Today, we are told that if their cholesterol doesn?t get you then their salmonella or chicken feed additives will. Since it is very hard, if not impossible to avoid them in your diet, I suggest that you take your eggs with a grain of salt! There are several things that need to be taken into account when using eggs. Firstly, they are not all made equal. Here in North America, eggs come in relatively standard sizes of small, medium, large and extra large. Have you ever wondered how they manage to get the hens to lay eggs in the quantities and sizes that they want? The truth, of course, is that they cannot control the size of eggs that hens lay. They simply direct the appropriate quantities of certain sizes to the consumer market and use the remainder for corporate or mass production where the size is unimportant. Beware of the difference that the size of eggs can make in your recipe. Many people are not aware that egg shells are porous and that eggs lose moisture over time even, or especially, if stored in the refrigerator. The white of the egg goes thicker over time as water is lost and the yolk will develop wrinkles as it loses its moisture. This is one way of judging the approximate age of an egg. In many recipes, you may be asked to add water. This is usually to replace moisture that would be present in an egg fresh from the hen. Your egg may be weeks old by the time you use it. At this time we have included cheese here with eggs, though in future it may well rate a section of its own. Just as versatile and nutritious in its own way, cheese is a great addition to many well-known recipes and can replace meat as the focal point of some main dishes.
